Dal kachori and khatta meetha kaddu...!!!

   

               Happy Dussehra everyone. Vijaydashmi  is celebrated all over india as it is the festival of victory of Good over Evil and is remembered as God Rama's victory over Demon Ravana. It is also the Day when all the people who had fasted for nine days during Navratra finish their fast and break it with Anna or any thing made of wheat flour, it's in our tradition that in our household we make khatta meetha kaddu and dal kachori  on this day every year ,so today I am sharing my recipe of khatta meetha kaddu and dal bhari kachori which is a must have on the day of dussehra every year...

Ingredients-
For Khatta meetha kaddu (sweet n sour pumpkin)

1 kg diced pumpkin(kaddu)
2 tbsp of mustard oil
1 tbsp of chopped garlic
1/4 tsp of fenugreek seeds (methi dana)
2 dried red chili's
1/2 tsp of turmeric powder (haldi powder)
1/2 tsp of red chili powder
1/2 tsp of salt (or to taste)
1/2 tsp of sugar
1/2 tsp of dry mango powder
Few mint leaves or coriander leaves ( you can use anyone you want or both)

For Dal kachori

For dough-
2 cups of whole wheat flour
1/2 tsp of salt
water as required for making dough

For Filling-
1 cup of urad dal husk free(Black Gram) (soaked and coarsely blended)
1  tbsp of oil ( mustard)
1/4 tsp of cumin seeds (jeera)
1/4 tsp of asafetida (heeng)
1 tbsp of fennel seeds (saunf) (roasted n coarsely blended)
1/2 tsp of red chili powder
2  green chili chopped
1/2 tbsp of ginger graded
2 tbsp of green coriander chopped

Method-
For sweet n sour pumpkin(kaddu)

Take a wok or kadhai put mustard oil when oil gets hot put chopped garlic and cook till little golden brown now add dry red chili after splitting it into two now add fenugreek seeds then add turmeric powder and red chili powder then add diced pumpkin and sprinkle salt over it and stir well and put the lid and let it cook for at least 15 minutes on low flame or till it completely cooks keep stirring at regular intervals so it cooks properly, when it cooks add sugar and dry mango powder and cook till all the water completely dries up add mint leaves and green coriander on top and serve with kachori.

For Dal kachori

For dough-
Take a bowl mix flour and salt together add required amount of water and make a soft dough and keep aside for at least  15 minutes  .

For filling-
Take a wok or deep pan put oil then add cumin seeds now add blended black gram now sprinkle salt , green chili, ginger , fennel seeds, asafetida, red chili powder ,green coriander chopped andmix well and let it cook for 5 minutes and keep stirring, slowly it will change it's color , then keep it aside till it cools down. Now make round pedas of dough and fill this in between and seal  it and roll it with the help of a rolling pin and deep fry it in a hot oil till it turns golden brown and serve hot with kaddu, you can carry these kachori's while travelling as well because they don't get spoil for at least two days.
